Abstract Quinoa is native to the Andes Mountains in South America, where it was planted since more than 5000 years in the region surrounding Lake Titicaca in Peru, Bolivia and Chile. Quinoa is called "mother grain ' in the language of the Incas and constitutes their basic food source as it remains the most important food crop for their grandchildren the Quechua and Aymara living in rural areas.
